We were given 2 hours to complete 2 plate per 4 course set.. The ingredients given is black box so we are supposed to be prepared if not precious time will be lost during the first few minutes of planning..
We were given beef and sea bass.. Our group planned to take up sea bass as none of us were great cook of beef.. If I tell you I am a professional chef student and I never cook beef and lamb last semester don't laugh at me okay? Cause Group B people are less fortunate I don't want to mention it anymore..
So we used up the 2 hours and then produce our stuffs..
Appetizer by YY.. Chicken fingers with fresh vegetables and herb vinaigrette..
Finally, all the exams are over.. Bakery is the last one which took place on last Thursday..
So, 2009 freedom belongs to us! Well,we have less kitchen/ practical class next year till cooking in the 'le cafe' so stay tuned if you guys want to eat what we cook in KDU..
So here are my bakery product, the PITA BREAD with FILLINGS..
We only exam on 1 product as we don't have much time as this Semester ends is so ******* pack with almost everything..
Then on exam date, we even have to start exam late as our juniors were not done with their products.. When they send their products for grading, we have to clean their stations before we can start our own.. See, pack semester to everyone..
This is my presentation.. Simple, Storeroom was locked so use items which are found in the kitchen only.. Hehe.. I even polished the mixer okay?
Have you ever heard of 'bread display' or 'bread showpiece' ? Maybe not heard but saw before lahh.. Those are hard bread made from 'salt dough' which u can see them on bakery shops on their display shelves.. For example the one in Cold Storage.. The bread is actually so hard it is not possible for you to eat but admire and sample of specialty breads all around the world..
As a Professional Chef student of KDU college, I would like to share some of our products lah.. We are actually the first group in this semester to finish up the bread showpiece.. So this is one of the topic in the subject Culinary Arts and Design.. Futhermore, bread display will determine our marks in the subject.. Our lecturer screwed us all in Butter Sculpture..
12 hours were given for us to complete the project.. We are allowed to plan out display and later on approved by our chefs..
4 of us who got no experience in handling the dough.. As first timer we did good job already lor.. Really pray hard to get good grades if not the CAD subject comfirm kena screwed..

Busy, Busy, Busy and Busy like a Buzzing Bee..
Everyday not enough sleep, food and gym..
Few days back suffered from diarrhoea, now cannot poot poot..
Like that how to survive 2009? Cannot reach 2012 to see the end of the world.. LOL!
Start eating good food so you wont die in misery..
Like my grilled chicken.. Dig out almost everything edible in the fridge and start cooking a plate of dinner at 8pm yesterday.. I can only eat it 60 minutes later..
BUT the hard work does pay its price.. I got the sauce recipe from my friend who is also a SHTCA 'silver medalist' in hot cooking catagory.. Yeah he love this tag!
Sauce is prepared with [saute chopped shallot(2), garlic(1), mix herbs, fresh orange peel/ orange chutney, carrot cubes], water, HP sauce, LP sauce, Maggi chili sauce and finally red onion.. The arrangement is the steps to follow..
Simple isn't it.. I got no starch product so I replace it with hard boiled eggs.. Protein!
Finally, I can catch a breathe and sit down in front of my computer and start blogging again..
First of all, thanks to everyone who came to my set lunch with the theme 'Nyonya Cuisine'..
Secondly, I would like to apologize if the food tastes does not suit you or it is actually terrible?
Heh.. BUT most of all, I would like to thank my group members though we have lack of cooks to prepare such wonderful dishes..
Lastly, everyone would like to complain our KDU purchaser as everything given is either rotten or late.. and my fish is mere loco -.-'

We did an experiment on a vanilla gateau last week as it was Gareth's Birthday..
Chicken is one of the Birthday boy favourite white meat.. So..
We made him a Chicken cake which took us around 3 hours for everything..

Ama Dessert is a shop that serves Asian or Chinese Desserts with the fusion of Western Dishes.. They got a story for it but I really don't read chinese you see..

This event was held in Youth Park together with the Children's Day 2009!
Cooking was organized by CAMPG members and helped by 3 chefs school: KDU, CAC and GIATMARA!
Cooking was leaded by Chef Aaron & Chef William ;)
The preparation starts at 9am and the whole event end at 7pm..
It was a tiring day but things get done well.. Foods were great and the line was long.. Free foods for the public ;)
This is SuSu.. To be honest, he is the most hardworking junior chef on earth ;)
Don't really went to a Halloween Party.. But we had a drive to Autocity, Juru to have dinner and look for the meanest car after a tiring day in Youth Park..
We volunteered by preparing a controlled buffet serving 6-7 dishes for the public in conjunction of the International Chefs Day and World Children's Day 2009..
It was tiring day and as usual that AR$3hole chef screwed some of the chef students.. Chairman of CAM pg to be exact.. If student were wrong, at least u tell them lah instead of screwing them
=.='' Then scream to the whole world their lecturer did not teach them well.. sigh..
So, we cabut from Youth Park and went back home to prepare for the halloween trip down to Juru.. Gareth drove Obala's car and we followed him..
BTW, 10 hours of volunteery work sure tired lah, Who don't?
Ahh.. Ugly pumpkin for halloween.. Don't worry lah.. This dude here was made into soup already last Wednesday..
