Styrofoam Carving

The last class CAD subject offered is the Styrofoam Carving class.. Glad we are not taught by the same lecturer as the Butter Class.. Those who read my blog would know why.. So, Chef Syam took over the Styrofoam class and we are given the freedom to choose our design.. 4 classes were given only cause of short semester so some of us took the project home while others did theirs in the storeroom..


Our Group B products: Scorpion, Taj Mahal, F1, Lobster Sculpture and Sydney Opera House..


Small, medium and large lobsters.. Roger, Fedrick and Jeffrey..


This is how styrofoam look like before it is coloured.. Duh? Thinner can be used to creat effects on the styrofoam.. It is corrosive!


Putting up some of the parts.. Supervised by Shiro Pi.. We worked till 4am to complete the colours.. We fix everything in the class room the next day..


Class room(107) the chef's so-called art room? Some people are so stupid they wipe the butter under the desks or chairs.. Morons! If any possibilities you came across this class room, do be-ca-re-ful!

Wedding Cake Decorations..

Hello again.. Sorry for the lack of updates.. I was busy studying Marketing subject for Mid Term which I think I will fail teruk teruk..
Ok enough of Marketing here is what we did for CAD 2.. CAD 2 means Culinary Arts and Design part 2..


Butterfly and Rose.. Made from Royal Icing and Pastillage.. We don't use the gum Paste because it contains too much ingredients and pastillage is our good friend!


Ops.. Forget to intro my group members.. Daniel on the left, myself, the wedding cake, Gareth and Reese.. The H&T chef got interested with our cake and asked us to keep it in the pastry kitchen.. So if anyone interested to view it.. It is in the pastry Kitchen, first work table only or can see throught the tempered window..

Bakery Exam Done!

Finally, all the exams are over.. Bakery is the last one which took place on last Thursday..
So, 2009 freedom belongs to us! Well,we have less kitchen/ practical class next year till cooking in the 'le cafe' so stay tuned if you guys want to eat what we cook in KDU..
So here are my bakery product, the PITA BREAD with FILLINGS..
We only exam on 1 product as we don't have much time as this Semester ends is so ******* pack with almost everything..

Then on exam date, we even have to start exam late as our juniors were not done with their products.. When they send their products for grading, we have to clean their stations before we can start our own.. See, pack semester to everyone..


This is my presentation.. Simple, Storeroom was locked so use items which are found in the kitchen only.. Hehe.. I even polished the mixer okay?


The bread.. Can be done easily but got to keep the steps properely or the pita wont rise and creat a pocket..


I made some stuffings with the left-over chicken cubes and vegetables which are not used in Penang Bridge Marathon catering..
Egg mayo, chicken fingers, some lettuces, carrot and onion rings..

Something FOOD you cannot EAT..

Have you ever heard of 'bread display' or 'bread showpiece' ? Maybe not heard but saw before lahh.. Those are hard bread made from 'salt dough' which u can see them on bakery shops on their display shelves.. For example the one in Cold Storage.. The bread is actually so hard it is not possible for you to eat but admire and sample of specialty breads all around the world..

As a Professional Chef student of KDU college, I would like to share some of our products lah.. We are actually the first group in this semester to finish up the bread showpiece.. So this is one of the topic in the subject Culinary Arts and Design.. Futhermore, bread display will determine our marks in the subject.. Our lecturer screwed us all in Butter Sculpture..

12 hours were given for us to complete the project.. We are allowed to plan out display and later on approved by our chefs..

4 of us who got no experience in handling the dough.. As first timer we did good job already lor.. Really pray hard to get good grades if not the CAD subject comfirm kena screwed..

Finally Over and Done..

Finally, I can catch a breathe and sit down in front of my computer and start blogging again..
First of all, thanks to everyone who came to my set lunch with the theme 'Nyonya Cuisine'..
Secondly, I would like to apologize if the food tastes does not suit you or it is actually terrible?
Heh.. BUT most of all, I would like to thank my group members though we have lack of cooks to prepare such wonderful dishes..
Lastly, everyone would like to complain our KDU purchaser as everything given is either rotten or late.. and my fish is mere loco -.-'
We received our rice and dessert glutinious rice flour 30 minutes before 12.. @@'
Ahh.. the lists goes on.. So.. Those who missed it.. Let me show u pictures I stole from Jeff's Mother ;]

1st SHTCA week by KDU PG Campus

Well, SHTCA means School of Hospitality Tourism and Culinary Arts.. And our school/department is located in the whole of the first floor in our college.
2009 is the first year our school organize the event.. The theme for the special event is 'Celebrating Unity Through Diversity.' The event started 2 weeks ago and ended yerterday, 23/10/2009.
Some of the competitions envolved are Essay writing, Poster, Singing? Mr and Miss SHTCA, Cooking competiton, Pastry Competition and etc..

I took part in the Pastry competition because the entry for the 'black box' cooking competition was fulled. Only my lucky leader got into the competition holding competitor ticket #15.. Heh!
4 of us from my group joined the pastry competition which was held on the 20th as there are still many places left..

1 hour of collecting ingredients, baking and garnishing is certainly not enough if we chosed to make complicated products.. End up, I made a blueberry gateau which my FP 2 chef said I could not win because it is too simple. My groupmate, Charles Ooi made swissroll.. Finally, we both won medals ;]
Oh well.. It all depends on the look, taste and garnish right?

Ahh.. This is the college competition, wonder if we can do really good for the real outside competitions.. Things will be real different..

Butter Sculpture

Memendangkan hari ini ialah Hari Raya Pertama, saya akan tulis 'post' ini dalam Bahasa Malaysia. Terlebih dahulu, Selamat Hari Raya Aidilfitri kepada semua orang Melayu dan Muslim yang membaca blog ini.

'Butter Sculpture' merupakan salah satu topik yang tardapat dalam mata pelajaran 'Culinari Arts & Design.' Topik yang unik ini diajar oleh seorang lecturer yang mempunyai Master dalam sculpture. Beliau juga merupakan seorang penulis buku. Kelas ini memberi kami peluang untuk menunjukkan kreativiti kami dalam membentuk sculpture yang diperbuat daripada butter.

Memandangkan kami hanya mempunyai 4 jam dalam seminggu untuk membuat 'sculpture' ini, kami terpaksa bertungkus-lumus untuk menyiapkannya. Setelah menyiapkan 'sculpture' tersebut, kami terpaksa memberikan bentangan tentang 'sculpture' kami. Pada masa itu, kami merasa cara pengadilan adalah tidak sah. Kerana yang cantik tidak diberi markah manakala yang hodoh dan lari dari tajuk mendapat markah yang tinggi. Saya merupakan salah satu daripada mangsa tersebut.

Apalah lagi yang boleh buat. Nasi sudah menjadi bubur.
Beginilah, tengoklah sendiri apa yang saya telah lakukan.

Setelah surat khabar lama dimasukkan dalam celah celah wayar.. Ini bagi meringankan berat rusa.

Pada masa yang sama, lecturer tersebut memberi tekanan untuk meletakkan butter atas rusa saya walaupun saya masih tidak menyiapkan amaturnya.. Ini adalah kerana dia hendak pergi minum kopi dan bentuk rusa saya telah keluar.. Beliau hendak tunjuk kepada kelas.. Bodoh atau gila sekali?


Butter telah siap dilapis atas amatur rusa.


Telah digilapkan dengan tangan, mata & hidung telah bentuk dan pengteksturan telah dilakulan.


Abang yang berkongsi papan dengan saya..


Semua orang dalam kelas saya.. Semua kawan dalam kelas adalah berkebolehan dan peramah.. Kami terpaksa memgambil gambar dengan lecturer nyanyuk sebagai kenangan. Itu pun idea beliau..

Kalau beliau terbaca blog saya, kawan saya ada yang lebih teruk lagi.. Nak tengok?
